This venture is a collaboration between three of the city’s most prominent hospitality figures – Daryl Leach, Paul Beveridge, and Tom Lauckner. Daryl Leach, the driving force behind the day-to-day operations of Sear’s Pizza, expressed his enthusiasm for the opening, stating, “We know good pizza, we bake great pizza, and we can’t wait to serve it to the amazing people of Glasgow.” Leach’s passion for pizza dates back to his early years, where he honed his craft in local Glasgow restaurants before embarking on a culinary journey to Italy. In Naples, he mastered the art of creating over 1000 pizzas a day, and in Rome, he specialized in baking Roman sheet pizza.
A Taste of New York in Glasgow
Leach’s love for Italian-American pizza, particularly the iconic “NYC-slice,” led him to New York City in 2016, where he worked as a pizzaiolo at Ray’s Pizza and Bagels in the East Village. It was during his time at Ray’s that Leach learned the secrets of making the classic New York pie. Reflecting on his experience, he shared, “Ray’s was open almost 24/7, and its affordability allowed all walks of life to come together over a shared love of pizza. This sense of community inspired me to recreate the same vibe in Glasgow.”

The interior of Sear’s Pizza, curated by Paul Beveridge, is designed to transport customers to an “80s/90s New York Deli” ambiance. With exposed brick walls, wood paneling, neon signs, and a self-serve soda fountain, the shop exudes a nostalgic charm reminiscent of New York City’s bustling streets. Beveridge, who drew inspiration from his childhood visits to NYC, aimed to incorporate elements of the city’s vibrant art and culture scene into the shop’s aesthetic.
The menu at Sear’s Pizza features nine carefully crafted pizza options made with the finest ingredients, including low-moisture mozzarella, San Marzano tomatoes, and a blend of Italian and organic, sustainable dough.
