Applications are now open for the prestigious Andrew Fairlie Scholarship, a coveted opportunity for aspiring chefs in Scotland. In its fifth year, the scholarship is a collaboration between HIT Scotland and the late chef Andrew Fairlie’s legacy.

The program offers a unique culinary education for future chef talents, providing them with the chance to gain hands-on experience in renowned establishments worldwide. Successful applicants will be tasked with creating an autumnal sharing dish using Scotch lamb for four people.

Finalists will have the opportunity to showcase their skills in front of a panel of esteemed judges, including Michelin-starred chefs like Tom Kerridge and Sat Bains. The winner will receive a two-day educational trip to France, hands-on experience at Restaurant Andrew Fairlie at Gleneagles, and a stage at Core by Clare Smyth in London.

Stephen McLaughlin, head chef at Restaurant Andrew Fairlie, emphasized the importance of staying true to oneself and submitting a polished application to stand out among the competition. Only the best applicants will make it to the finals day, where they will compete for the prestigious scholarship.

Last year’s winners, Darren Seggie and Rachel Bremner, had the opportunity to advance their culinary skills and knowledge through the scholarship. Seggie impressed the judges with a potato-based dessert, while Bremner wowed them with a savory potato and egg yolk ravioli dish.
